Experimenting with Breakfast Casserole

Breakfast casseroleI took advantage of the weekend to experiment with a breakfast casserole. Inspired in equal parts by having time to fix a breakfast that involved more than cereal and milk, having some hashbrowns that I wanted to use and being hungry for a substantial breakfast, I started looking around for ideas.

I’m a big fan of Allrecipes.com, so I started there. I found a recipe called Breakfast Pizza I. One of the features that I especially like about Allrecipes is the feedback left by others about the recipes. My standard criteria for even looking at a recipe is that it has to have between 4 and 5 stars and it has to have at least 30 reviews (I modify this when looking for vegetarian recipes because they often don’t get that many reviews, sigh.) And I rarely start fixing a recipe without reading at least a page or two of the reviews becuase often there are many good suggestions, modifications, etc. to be found in the reviews.

At any rate, after reading some of the reviews I decided this recipe was worth a try. The original recipe called for refridgerated crescent rolls, separated into triangles and then pieced back together into a circle on a pizza pan. I consider myself pretty good when it comes to geometry and crescent rolls, but I couldn’t figure out how to make get them nicely into a circle so I opted for lining the bottom of a 9×13 pan with the crescent roll pieces. That worked out pretty well. I also pre-baked the crust a little bit before adding any toppings.

I don’t eat meat, so I exchanged meatless “crumbles” for the sausage, but otherwise used the rest of the ingredients as called for (so it wasn’t a totally daring experiment). It actaully turned out to be REALLY good and I will definitely be making it again. I love weekends!
